SMG 2008 (65% Syrah : 25% Mourvèdre : 10% Grenache)
100% de-stemming with no crushing gave a whole berry component of about 80% in stainless steel fermenters. Local y easts were inoculated for primary fermentation that lasted for 14 days. Daily manual punch downs for maximum flavour and tannin extraction were applied. The mash was basket pressed and gravity fed to 225 litre second, third and fourth fill Burgundy cooper French oak. The blend of Syrah (65%), Mourvèdre(25%) and Grenache (10%) was lightly filtered prior to bottling after 12 months of barrel maturation. Read more.....
